Fresh Vs. Frozen

 

A fresh turkey is just that—fresh, not frozen. As it requires no thawing time, it’s ready to cook. One of the hazards of buying a fresh turkey is the tendency to ignore any dates that may appear on the label. Consider when your dinner is going to be and plan accordingly, buying your fresh turkey no more than a few days ahead. Although many advances have been made in packaging and refrigeration, everything has a limited life span: once the wrapper has been cut or compromised, the clock is ticking toward spoilage. Always cook the turkey within 3 days of the “sell by” date.

 

When do I Need to Thaw My Turkey

National Thaw Your Turkey Day 

The Thursday before Thanksgiving is National Thaw Your Turkey Day. No matter how big or how small your turkey, it’s time to take it out of the freezer and put it in the refrigerator. Small turkeys that thaw in 3 to 4 days still can be safely held in the refrigerator if kept in the original wrapper and at a refrigerator temperature of 40ºF or lower.

How Do I Thaw My Turkey Quickly?

Here’s a quick-thaw method. Partially fill the sink with cold water. Place the turkey breast side down in the water so that it’s like an iceberg, with the largest part submerged. The turkey itself will float, so don’t worry—it need not be fully submerged. The U.S. Department of Agriculture recommends that you change the water every 30 minutes. The thawing time is easy to calculate: just divide the weight by two, and that’s the number of hours needed to thaw the turkey in cold water.

  • Leave the wrapper on the turkey. 
  • Divide the weight by two to determine the number of hours needed to thaw it in cold water.
  • Change the water every 30 minutes. 
  • Place the turkey breast-side-down in the water. The turkey will float! 
  • Sanitize the sink when finished.

Important Reminder:

  • Do not thaw at room temperature, as this will cause bacterial growth to increase on the surface of the turkey before the inside is fully thawed. 

 

  • Allow ample time for the turkey to thaw in the refrigerator; use the thawing guide.

 

Now that your turkey is thawed, your next question is… How do I get started cooking my turkey?

Cooking Your Turkey

 

Remove the wrapping from the turkey. 

  • Drain the turkey over the sink and check both of its cavities. One holds the neck and the other the bag of giblets. Remove these and either reserve them for use in your recipes or discard them. Some people like to cook them for either themselves or their pet—it’s up to you! 
  • Blot the exterior of the turkey dry with paper towels. 
  • Stuff the turkey if desired.
  • Bend the wings behind the back of the turkey (optional). This move is meant to hold the neck skin in place, but it’s not really necessary. 
  • Brush or spritz the turkey with oil, and season if desired. • Insert an oven-safe meat thermometer into the turkey. 

 

Prepping the turkey and roasting it are easy to do despite attempts by many to complicate the matter. Simply place the turkey on a rack in a shallow, open pan. If you’re using a disposable roasting pan, place the pan on a baking sheet for support. Most disposable foil pans have some “bumps” on the bottom that act as a rack, helping to keep the turkey out of its juices as it cooks. Brush the skin with oil, or use a cooking spray to add moisture to the skin.

 

Seasoning Your Turkey to Perfection

 

Seasoning is a matter of personal preference. In reality, any seasoning that is sprinkled or rubbed on the turkey will not flavor or penetrate the skin or the ribs. The skin is a barrier—it keeps substances from getting into the meat. Think about your own skin. If you sprinkle oregano on yourself, it wouldn’t seep through your skin and flavor your insides! The only part of the turkey that gets flavored is the skin itself—as well as the pan drippings. Trends in seasoning change, just as recipe ideas featured in magazines change from year to year. Whatever choice of flavors is your passion, just remember to follow the timing guide for the specific cooking method you will be using. The only thing you really need to do is keep it simple.

 

Is a Dry Rub Better Than Marinade? 

 

Some people use a dry rub, while others marinate the turkey using their favorite seasonings. The variations are countless. There may be as many recipes as there are cooks, and they can range from simple to complex. Some people feel that if they don’t shake something onto the turkey they just aren’t cooking it at all! Permission granted. If you want to season the turkey with salt and pepper before roasting, go ahead, but know that any seasoning that you sprinkle on top of the bird or place in the cavity will not affect the flavor of the turkey and may affect the flavor of the gravy. Your only essential ingredient is oil. Everything else is superfluous.

 

Should I Stuff My Turkey?

To stuff or not to stuff, that is the question. There are as many opinions about stuffing safety as there are recipes, but here’s the bottom line: if the stuffing has been prepared properly, placed in the turkey just before roasting, and cooked to a temperature of 160ºF, it’s perfectly safe. Here are a few tips for proper food handling when it comes to stuffing: 

  • Do not prepare your stuffing in advance. 
  • Do not stuff your turkey the night before. 
  • Do not use uncooked meats in your stuffing. 
  • Do not use eggs in your stuffing (an egg substitute is acceptable). 
  • You may sauté your vegetables and meat in advance, but do not toss them with the broth and the bread cubes or crumbs until you are ready to stuff your turkey. 
  • When taking the final temperature of the turkey, also take the temperature of the stuffing. The thermometer should read 160ºF when placed in the center of the stuffing.

 

How to Determine if Your Turkey is Done

Confusion abounds among chefs and home cooks alike when it comes to oven temperatures and final cooking temperatures. If you were to cook your turkey to an end temperature of 160ºF, the meat— though safe to eat—would be very rare and have an unappetizing quality and texture; the juices would be very pink and the meat would be chewy. So, for optimum taste and visual appeal, it is recommended that the thigh temperature be 180ºF.

 

If you just don’t have a meat thermometer, the old-fashioned method of piercing the lower thigh with a fork to see if the juices are running clear will have to do. The color of the skin is not an indication of doneness. Even if the skin is brown, it may be that the outside just cooked too quickly because of a high oven temperature. Conversely, the skin could be pale simply because you used a covered pan and the turkey itself could be done. Poke around with a fork to pierce the lower parts and check to make sure the juices are running clear.
